"The Samford Sessions" continue as Pause showcases Brisbane's leading acoustic talents...
Come and be entertained by Sarah Calderwood and Paul Brandon. This talented duo play a diverse mix of originals and covers with flair and panache. They cross the roads of roots and folk, wander through world music and Celtic and revisit modern songs with their own arrangements.... As one half of renowned bands Súnas and RedCrow, they have toured extensively in Australia and overseas, played at most folk and roots festivals and released five acclaimed albums. The last Súnas album and Sarah’s first solo record (both recorded for the ABC) charted in the ARIA classic/world/roots Top Ten, and receive worldwide airplay, while the debut RedCrow album was a finalist in the Australia Roots Music Awards 2017.
Sarah received an ARIA Award nomination for Best World Music Album, 2012.

Yet another course from our fabulous meal at "Elle & Lui" in Rome... A seafood platter of ridiculously fresh raw seafoods: Scampi, violet and red prawns, finely sliced Merlu, French Atlantic oysters... If you were lucky enough enjoy our "Raw and Seafood" focus night (with French Champagne), I'm sure you will remember the joy of eating super fresh Seafood Raw...

Hi from Italy!
Isabelle and I are currently taking a break from Pause for some intensive market research in Europe... We had the immense privilege to dine in the magnificent "Elle & Lui" in Rome. The Chefs are an inspiration for our Executive Chef Rino, as they worked together in several restaurants over the course of his career... (Chef Rino generously shouted us this amazing meal...)
We enjoyed a marvellous degustation (more images to follow)...shown here is a pasta course of Squid Ink Tagliatelle, with seared calamari, zucchini flowers and freshly grated Bottarga (compressed cured mullet roe). How astonishing!, how delicious!!

Every month, Pause brings Italy to Samford, showcasing our Italian Chef’s skills and heritage, by focusing on a particular region and it’s table. This month Chef Rino takes you to his home town, Rome and showcases a very authentic menu.
Welcome: Pizza Bianca c’a’ Mortazza... (house made focaccia with mortadella)

Amazing dinner in a perfect location. Can't think of a better night to celebrate our anniversary. Chef Rino surprised us with some authentic Italian flavours never thought you can find over here. The Wagyu and the braised Pork with mushrooms polenta were absolutely delicious. Impeccable service as well.
