Did you know that fresh coriander roots have bags of flavours in them, even more than the leaves? They never go to waste in my house 😋👌🏽☘️☘️ Check out my chicken tagine recipe with Chermoula ‘ a delicious Moroccan marinade’ on my blog. Most of the time I get my cooking inspiration from fresh produce in my kitchen. The best dishes I make are the ones inspired by whatever I have available in the kitchen at the time. What about you ? Where do u get your inspiration from? And what is the dish that no matter how many times you cook it, you still look forward to eating it or sharing it with someone ? Mine is Bamya bel Lahma ‘Okra stew with meat’ ... Share your food stories with me I’m all ears 👂🏼

Inspired by watching MasterChef Australia finals week, I made this amazing dish by chef Neil Perry from Masterchefau second season’s book. ‘ Snapper fillets poached in coconut milk with home made garam masala and noodles’ Guys, honestly, this is one of THE best dishes I’ve ever made!! I wanted to challenge myself since this dish was created to challenge the contestants on the show, so I had to fillet the snappers myself which I’ve never done before, AND bone them too .. Wohooo !! It took a while but it was worth it, plus I can now tick ‘filleting a snapper’ off my to do list ✅ A bomb of beautifully balanced flavours in this plate and the fish just dissolves in the mouth. Thanks Neil for a lovely dish 😋👌🏽

I haven’t seen this before, have you ? Also how do you like to eat your Brussels sprouts. I find that grilling them with some olive oil, garlic, salt and a squeeze of lemon makes them taste so delicious!

I don’t know about you, but I can’t do Ramadan without foul ‘fava beans’ at Suhoor. I have to have some to keep me going during the fasting hours! Foul makes you feel full for a long time because it’s high in protein, and it’s also rich in fibres, carbs, minerals and vitamins. I like to add a generous amount of extra virgin olive oil to my foul, it helps in providing energy during the day and also slows down digestion.
... This recipe though is made out of ‘Split beans’ not the whole bean. Yes some of u might think it’s ‘Besara’, it’s similar but it’s not.
I made this one especially for those who can’t tolerate whole beans. It’s hard for some people to digest beans skin, so here I’ve used skinless split beans and added some delicious egyptian ground cumin, served with hot pita bread and last but not least is the final squeeze 🍋 #eatlikeanegyptian ** note: All u need to do when u reheat it, is add a bit of water, as it tends to harden a little when cold. Enjoy!
Ramadan Kareem!

Want to have a break from the meaty iftar? Make this vegetarian dish for your next iftar or dinner. One of my favorite soups in the world is a pumpkin soup with burnt butter and sage 🍵 This dish happens to be a delicious extension to this soup 🎃 Here’s to a healthier and more scrumptious Mac’N’cheese!
... Note* Sage (mermeyya) is a herb 🌿 which could be found fresh or dried, and it’s so easy to grow in your garden. Sage is a perfect addition to pumpkin and a key ingredient in this recipe. Enjoy!

I was just watching Nigella Lawson cook on lifestyle channel she got me so hungry, I feel like saffron orzotto right now haha! 😃🇮🇹 Nigella says ‘Sometimes the simplest food makes for the best dishes’ Amen to that! Now this dish i made a few weeks ago is so simple yet incredibly delicious! It’s a sticky honey mustard chicken served with crunchy broccolini and jasmine rice. The combination of honey and whole grain mustard is what makes it soooo tasty. I can’t tell you how m...uch the kids loved it, they licked their plates!! I made it a few times already and I thought it’s time now to share the recipe with you all. Click the link for the recipe 👇🏾 http://afoodiesaffairs.com/…/sticky-hon ey-mustard-chicken-…/

A simple dish with just the right balance of flavours is always a winner, don’t you think?
This ‘Konafa’ is a perfect example. Filled with creamy ricotta cheese and topped with 100% pure Maple Syrup 🍯 Yes that’s right, Maple syrup is so much better than refined sugar syrup, and I think it tastes even better. So skip the syrup making step and trust me, pour some pure Maple Syrup on your hot Konafa! To make my life easier, I used a spring form tin so I don’t even have to wor...ry about the Konafa flip! *Watch the video and share the love for Konafa!

While sorting out my photos I captured in Egypt earlier this year, I came across this one and I couldn’t help but share it with you. If you haven’t figured out what these are yet, they are Egyptian street falafel ‘ta’ameya’. Displayed in this way to attract people attention while they walk past the tiny shop, which usually specializes in selling freshly fried falafel the ‘grab and go’ kinda food. The metal pot on the right is where they deep fry it. Whether you agree with me or not, I believe that Egyptian falafel are THE best!! soft and green from the inside brown and crunchy from the outside #sorrynotsorry 😬😁 To make the best Egyptian falafel at home check out my recipe on the blog. Search for falafel www.afoodiesaffairs.com
