Applejack Hospitality is a boutique Sydney based hospitality group founded by seasoned professionals Hamish Watts and Ben Carroll in 2011. Applejack has worked on consultancy projects including launching Hacienda with Pullman Hotels (2016), and Veriu Hotels and Harbour Rocks Hotel.
