We use a base of some really nice chickenstock and fish bones. The paella itself has great mix of squid, octopus, prawns, edamame beans and wakame seaweed. Made with sushi rice, hondashi and topped with bonito flakes, it's a great mix of Japanese and Hawaiian cuisine!
