In homage to our late co founder Norma Polese we have created a version of the famous Pasta alla Norma. This dish was created originally in the city of Catania in Sicily . It is recounted that when Vincenzo Bellini, the famous composer who was from Catania, was served a pasta with a sauce made from Eggplant, Tomatoes, Ricotta salata & basil. He said it was as beautiful as his Opera "Norma". My late mother was named after this opera. We have modified the original by producing a version with Ravioli.
