The Mimolette is a hard cheese from the north of France, and is an aged, RAW cow’s milk cheese. It is naturally rinded and gets its distinct orange colour from annatto (derived from the seeds of the achiote tree). Matured for 6 months, this cheese has an intense flavour with a hint of hazelnut and butterscotch.
