Figtree Food Company Description

Richard Lawson is no stranger to the food and olive culture of NSW. He travels widely with his very popular brand of Tapenades and Jams and is currently based in the Central West of NSW.
He moved from Sydney to the Central West around Mudgee in 1996 after a successful musical career with internationally acclaimed Australian alternative rock group the Lime Spiders.
Richard also has been a cook /chef for over 25 years and has cooked at many restaurants, cafes and festivals both in Sydney and in the country, including stints with Tony Bilson, Armando Perucco and is currently working at Mudgees only hatted restaurant ‘The Zinhouse’
He set up his farm Figtree Retreat Olives in Mudgee in 1997 during which he planted over 300 certified organic Olive trees, fruit trees and vegetables. After a well earned break from the farm in 2009 he moved back into the world of music and released 5 full length albums, toured constantly and ran the highly successful Gulgong Folk and Mudgee Music festivals as well as hosting 2 radio programs
The call of the kitchen and garden is never far from Richard and his wealth of experience on all facets of food from the paddock to the plate as well as beyond is reflected in his range of products which are adaptable for all seasons and menus.

Product Tasting Notes

Garlic and Olive Tapenade
This classic recipe dating back to Roman times, uses a robust blend of olives, garlic, parsley and capers. It's great on pizza, pasta, with meats, as a vegetable dip or with cheese or small toasts. Mix with butter for a superb sauce for steak! Great with Feta, Ricotta, Goats Cheese or any white cheese.
Fig and Olive Tapenade
A pure indulgence! Based on a Turkish /Arabian recipe it is rich beyond belief. A complex mixture of olives, dried figs, brown sugar, balsamic vinegar it is not unlike Olive Chutney. Use it on duck or lamb and goat or any game meats. It is also beautiful with a cheese platter, especially cheddar, blue and a sharp parmesan or just spread on toast for brekky.
Sun Dried Tomato and Olive Tapenade.
Tomato and Sundried Tomato overtones send this tapenade into tangy territory. Wonderful with cheese and beer and just perfect with Goats cheese. The taste of the Mediterranean. Its is highly recommended as a pizza base.

Lovely as a jam or condiment. Perfect with meats or breakfast spread
Preserved Cherries
From the bountiful cherry harvest in Mudgee comes this simple but classic preserved fruit…. try with cheese plate or on top of ice cream
Grapefruit and Mint Marmalade
Strong, robust flavours with lots of mint, try with blue cheese and roast beef or lamb
Fig and Ginger Jam
Classic jam from the fruit bowl of NSW. . . loads of ginger
Plum Chutney
When there is lots of plums we love to do this staple chutney but with lots of brown sugar and balsamic which gives it a deeper more grown up flavour

Shout out to the amazing Uschi Galore of Gourmet Mushrooms of Mudgee...she is single handedly supplying Mudgee town and its wineries and better quality food businesses with top end funghi...all in the middle of the biggest time of the year up there...Wine and Food Festival...and dont forget Mudgee recently was voted #1 foodie destination in NSW...no mean feat Plus she is a great friend and a real fun guy...couldnt resist it
