Something I haven’t done for over 8 years and was a delight making them and eating them 🐷 these little bad boys are called “empadinhas” and have been adored in Portugal since the 19th century. In Portugal they are normally made with chicken, But today I had quite a bit of meat to use up and decided to make them a 3 way special... 🐑 , 🥩 and 🐓 with fresh peppercorns. LusoRice spring/summer menu planning underway, we are looking to add a very intriguing salad/sandwich section and introducing a couple more rice options. I’m particularly excited in introducing rice bread for our sandwich option, and incorporating lemon verbena and pomegranate just two of many flavours found in my grandparents garden in Portugal.
