SPINACH & ZUCCHINI CHOCOLATE CAKE Prep 20 mins | Cook 35-40 mins | Serves 8
300g zucchini, chopped 1 cup milk ... 75g baby spinach leaves 1 cup cocoa 250g butter, melted 2 cups brown sugar 6 free-range eggs, at room temperature 2 cups plain flour 1 tsp bi-carbonate of soda ยฝ tsp baking powder 200g fresh strawberries, hulled and halved, to serve
Chocolate cream cheese frosting: 250g reduced fat cream cheese, chopped and at room temperature 3 cups icing sugar mixture 1/3 cup cocoa powder 1-2 tbs milk
STEP 1 Preheat oven to 180ยฐC/160ยฐC fan-forced. Line the base and sides of 2 x 20cm round cake pans with baking paper. Combine zucchini and milk in a blender. Blend until smooth. Add spinach and cocoa. Blend again. Set aside.
STEP 2 Combine melted butter and brown sugar in a large bowl and whisk until combined. Pour in zucchini mixture. Whisk in the eggs. Sift flour, bi-carbonate of soda and baking powder into mixture. Using a large metal spoon, fold until well combined. Pour into prepared pans. Bake for 35-40 minutes or until cooked when a skewer inserted in the centre comes out clean. Set aside to cool in the pan for 15 minutes. Transfer to a wire rack and set aside to cool completely.
STEP 3 Meanwhile, to make the chocolate cream cheese frosting, using an electric mixer, beat cream cheese and icing sugar mixture together until creamy. Beat in cocoa powder and milk until smooth and fluffy. Transfer to an airtight container and chill until ready to serve.
STEP 4 To serve, place one cake onto a serving plate. Top with frosting. Add remaining cake. Top with frosting. Scatter with strawberries. Sprinkle with a small chopped honeycomb chocolate bar, if liked.

FRAGRANT BUTTERNUT PUMPKIN SOUP Prep 20 mins | Cook 35 mins | Serves 4
The soup thickens on standing, add extra stock if necessary.
... 2 tbs peanut oil 2 garlic cloves, finely chopped 3 cm piece ginger, finely grated 1 Birdโ€™s Eye red chilli, deseeded and chopped 1.3 kg butternut pumpkin, peeled, deseeded and diced 2 fresh kaffir lime leaves (optional) 4 cups chicken stock 1โ„2 cup reduced fat coconut milk Coriander leaves, finely sliced red chilli and kaffir lime leaves, to serve
STEP 1 Heat oil in a large saucepan over medium heat. Add garlic, ginger and red chilli and cook for 1 minute. Add pumpkin and cook, stirring often, for 5 minutes. Add kaffir lime leaves (if using) and stock. Bring to the boil. Reduce heat to medium-low and cook, stirring occasionally, for 20โ€“25 minutes until pumpkin is tender. Remove kaffir lime leaves.
STEP 2 Blend soup until smooth. Stir in coconut milk and season with salt and pepper to taste. Heat, stirring occasionally over low heat until hot. Ladle into serving bowls, top with coriander leaves, kaffir lime leaves and chilli and serve.

With over $900 raised... I didnโ€™t have room to fit everything... so tomorrow back to the produce markets to pick up another pallet of produce for our Australian farmers doing it tough in the drought. So apparently it has been 29 days since I last posted... so FB tells me. So I thought maybe to post something to help us out during the cold and flu season. We always have loads of garlic and onions and citrus in winter... I did try the tea... mehh! ๐Ÿ˜‚
