Mr Baillie + Co is a small Butcher committed to sourcing whole, pasture raised animals direct from small farms with sustainable farming practices. We like to things as natural as possible, not only in how food is grown but also in how we process it. That means lots of preservative free options.

Our story began with owner and self confessed home cook Steve, who fell into butchery on a working holiday in London. It was here that he gained respect for value of meat provenance and the tradition of the local butcher.

Through our responsible sourcing; we hope to make a change in the quality of life for animals and facilitate nose to tail consumption to minimise waste. We think it’s important to support the local farmer too. It’s our farmers who are the heart and sweat behind producing happy, healthy animals.

We’re excited to open the first Mr Baillie + Co store in Rozelle. Not only is there a great legacy of artisan butchers in the Balmain, Rozelle community but we fell in love with the beautiful store at 1 National Street, Rozelle and sense of heritage it inspired.
