Tasty Tuesday ūüėč
Freshening up in the Sunshine with a fried eggplant and salmon salad.
Ingredients: Lettuce, tomato, capsicum, pine nuts, eggplant and a can of salmon.
... To make the eggplant: cut 2-3 1 cm slices of eggplant and fry with a drizzle of extra virgin olive oil (about a teaspoon) and a good sprinkle of salt and pepper. Top with the lid and steam until brown and soft on both sides.
Dress with balsamic, tamari or a touch of mustard and honey. Delish!

Looking behind and into Grainwaves packets in a pantry near you....
Most people would probably consider Grainwaves a healthy snack, especially because it has whole grains and sweet potato.
Unfortunately, this snack is full of sneaky nasties.
... For starters, the sweet potato is listed as powdered sweet potato. Often powdered vegetables have extra bulking agents in them that aren't required to be listed as ingredients.
The vegetable oil used doesn’t say specifically what oil is used; it could be one or more of the most common vegetable oils such as peanut, cottonseed, safflower, soy, sesame and palm oil. This is concerning considering some of the most common allergies are to peanut, soy and sesame.
Whole grains are another misunderstood food. Although they’ve been in our diet in excess of 10,000 years, the grains we eat today are vastly different to the ones our ancestors ate. Nowadays, most grains are so processed that they’re deficient in valuable vitamins and minerals. They are also genetically modified to increase yield and resistance to pests.
Maltodextrin is a bulking agent with no nutritional value and a higher GI than sugar! It has also been shown to cause allergic reactions, bloating and cramps.
These types of foods are made to be convenient and it’s easy to polish off an entire packet by yourself. But, a word of warning. The packet includes.... -11g of sugar (2-3 teaspoons) -662.4mg of salt (definitely not the Celtic or himalayan variety) -3.42g saturated fat intake (approximately one third of the recommended daily intake).
