Ingredients 500gms of green beans, washed 8 slices of prosciutto 2 cloves of garlic, minced 2 tbspns of olive oil Splash of balsamic vinegar to serve
Cook beans in microwave, or on the stovetop, until slightly cooked but still crunchy (approximately 3 minutes). Drain and portion into 4 serves. Wrap 2 slices of prosciutto around each bunch. Pan fry in olive oil and garlic until fragrant.
Enjoy with steak, chicken or fish. For a vegetarian alternative, wrap the beans with the dark green section of shallots and follow cooking instructions as above.

Directions Preparation: 7minβ€Ί Cook:20min β€Ί Ready in:27min Preheat oven to 210Β°C. Lightly coat a large baking tray with non-stick cooking spray. Combine sweet potato, oil, salt and pepper in a large bowl. Toss to coat. Spread fries on the tray in a single layer. Bake 10 minutes. Turn fries over. Continue baking until tender and lightly browned, about 10 minutes longer.

Italian Frittata Recipe Ingredients (serves 4)
... 6-8 x eggs 1 x onion, finely diced 2 x garlic cloves, minced 1 cup of cheddar cheese or feta 1/2 punnet cherry tomatoes, halved 1/2 cup of sour cream or greek yogurt 1/2 cup of fresh basil, torn
Method Stir fry onion and garlic until soft and fragrant. Whisk eggs lightly in a large bowl with sour cream. Add cheese, tomatoes and onion/garlic mixture. Gently fold in basil leaves and transfer to a greased quiche dish.
Bake in a preheated oven (180C) for 35 minutes or until centre is firm to touch.

Did you know that Kale is high in antioxidants, Vitamin K, Vitamin C and Iron. It is a vegetable which contains lots of gut cleansing fibre and low in calories.
Try Our Delicious Sauteed Kale Recipe Ingredients 1 x large bunch of kale, washed and coarsely chopped (be quick, on special now for $1.69)... 2 x cloves of garlic, minced 1 x onion, finely diced 2-3 tablespoons of extra virgin olive oil or butter 1/2 teaspoon of chilli flakes (optional) 1/2 cup of vegeta stock (made as directed)
Method Heat oil, or butter, in a large saucepan. Add onion, garlic and chilli and saute until soft and fragrant.
Add kale and stock, cover and cook for 5 minutes... stirring occasionally. Remove cover and continue to cook until the stock is almost absorbed.
Garnish with Pine Nuts, season to taste and serve with steak, chicken or fish.
P.S. Kale can be stored in the freezer. It is a great addition to soups and casseroles. Buy several bunches, wash, chop, shake off excess water and transfer to freezer bags. Ready to go for a no fuss meal.

Try Our Scrumptious PUMPKIN AND GINGER SOUP Recipe (serves 4) 1 x jap pumpkin, peeled seeded and chopped 1 x onion, chopped... 3 x cloves of garlic, minced 1 x 3cm knob of ginger, peeled and minced Dash of extra virgin olive oil Herbs of choice, minced (basil/coriander/parsley) 1 x litre of Vegeta stock, made to directions
Boil, or roast, pumpkin until tender. In the meantime, fry onion, garlic, ginger in a large pot in olive oil until soft.
Add pumpkin, stock and herbs. Simmer for 10 minutes. Use a stick blender or potato masher to blend. Add more stock if too thick.
Upon serving, optional additions are chilli (dried or freshly chopped), sour cream or greek yogurt. Ooooh, don't forget to mop up with a crusty piece, or two, of bread. Wonderful Winter Warmth!!

Eggplant contain an impressive list of vitamins and minerals, such as fibre, folate, potassium and manganese, as well as vitamins C, K, and B6, phosphorus, copper, thiamin, niacin, magnesium, and pantothenic acid.
Here is a tasty, and simple, recipe to take advantage of the benefits.
Eggplant Stacks (serves 2)
... Ingredients 2 x medium eggplants
50 grams of danish feta or cheddar cheese, sliced
1 x avocado, sliced
1 x cup of your favourite pasta sauce (heated)
Salad leaves to serve
Eggs, poached or fried
Torn basil leaves to garnish
Method
Slice the eggplants into 1cm rounds. Brush with olive oil and bake in the oven, 180 degrees, until tender (turning once). When ready, place a round on the bed of salad leaves and adorn with avocado, feta and sauce. Repeat with remaining ingredients to make a stack of healthy goodness. For a blast of protein add an egg, or two, on top. Enjoy!

Did you know that garlic protects against infection and inflammation, lowers the risk of heart disease, and has anticancer and anti-aging effects.
Try Roasting whole bulbs of garlic in the oven. 1. Heat the oven to 400Β°F: Set a rack in the middle position. 2. Trim the top off the head of garlic: Trim about 1/4 inch off the top of the head of garlic to expose the tops of the garlic cloves.... 3. Drizzle with olive oil: Drizzle 1 to 2 teaspoons of olive oil over the exposed surface of the garlic, letting the oil sink down into the cloves. 4. Wrap in foil and bake: Wrap the garlic in aluminium foil and roast in the oven for aprox 40 - 45 minutes.
The garlic is done when a clove is soft & golden providing a yum caramelized flavour.
