#CookingTip: Preserve #Moisture with Low Heat!
When it comes to larger cuts of meat or poultry, it is recommended that you use a ‘low and slow’ cooking method.
Cooking this way allows the centre of the meat to reach the desired internal temperature without overcooking the outside layers.
... Low and slow cooking also reduces the loss of flavoursome juices.
Lifehacker conducted an experiment where they took two 3 kilo rib roasts and roasted one at 230ºC and the other at 120ºC until each was medium rare. They then weighed the roasts and found that the slow-cooked roast lost about 9.25% of its starting weight. The high temperature roast lost about 25% of its original weight.
What does this mean? Proteins shrink less and expel less moisture and fat when they’re cooked at moderate temperatures.

#Recipe:
Ingredients 340g Brussels sprouts halved 2 tablespoons extra-virgin olive oil, divided 5/8 teaspoon kosher salt, divided 1/2 teaspoon black pepper, divided 4 (115g) boneless centre-cut loin pork chops 2 tablespoons ghee, divided 340g sliced Honey crisp apple (1 large apple) 1/3 cup unsalted chicken stock 1/8 teaspoon ground nutmeg 3 tablespoons maple syrup 2 tablespoons Dijon mustard 1 tablespoon chopped fresh flat-leaf parsley
How to Make It Step 1 Preheat broiler to high. Set the oven rack on the middle shelf.
Step 2 Combine sprouts, 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a bowl; toss to coat. Arrange sprouts in a single layer on a jelly-roll pan coated with cooking spray. Broil 12 minutes, stirring every 3 minutes.
Step 3 Heat a large skillet over medium-high heat. Add remaining 1 tablespoon olive oil; swirl to coat. Sprinkle pork with 1/4 teaspoon salt and remaining 1/4 teaspoon pepper; add to pan. Cook 3 minutes. Turn; cook 2 minutes or until done. Transfer pork to a plate.
Step 4 Add 1 tablespoon ghee and apple to pan; sauté 2 minutes. Add stock and nutmeg; bring mixture to a boil. Stir in remaining 1/8 teaspoon salt, remaining 1 tablespoon ghee, syrup, Dijon mustard, and parsley; cook 1 minute. Divide chops among 4 plates; top evenly with apple mixture. Serve with sprouts.

Change up the way you eat your #steak with this satisfying steak and rice salad, drizzled with creamy ranch dressing
INGREDIENTS 250g pkt microwavable black or brown rice 4 Beef Porterhouse Steaks 1 tablespoon olive oil 40g baby rocket leaves 400g Perino tomatoes, halved 1/2 red onion, thinly sliced 1/4 cup (40g) almonds, toasted, chopped 2 tablespoons ranch dressing
METHOD Step 1 Heat the rice following packet directions. Place in a heatproof bowl and set aside to cool. Step 2 Meanwhile, heat a barbecue grill or chargrill on high. Coat the steaks in oil and season. Cook for 3 mins each side or until cooked to your liking. Transfer to a plate. Cover and set aside for 5 mins to rest. Step 3 Add the rocket, tomato, onion and almond to the rice in the bowl. Toss to combine. Step 4 Place the ranch dressing and 1 tablespoon warm water in a small bowl or jug. Stir to combine. Divide the steak and salad among serving plates. Serve drizzled with the dressing.
