Coffee collective are a reknowned Roastery and cafe in Denmark. They coined the term ‘direct trade’ in specialty coffee meaning that they buy directly from the farmers themselves. Furthermore they are completely transparent about the prices they pay for green coffee and even print their margin above market price on their bags. This weekend we will have a selection of their best coffees available on filter and espresso.

This weekend we'll be brewing two coffees from Ethiopia Kochere on our slow bar -- one roasted by New Paradigm Coffee and the other by Sample Coffee. Roasted using different profiles, the Kochere roasted by The New Paradigm tastes of stewed rhubarb, hibiscus and rose; where as you'll find more of a citric acidity from Sample Coffee with notes of florals, apricot and lime

Running on all our blacks this morning we have the Victor Herrera from Oporapa Colombia, roasted by our friends parallel roasters. This coffee is a 100% tabi variety and is produced at an elevation of 1700-1900 masl. This coffee has been anaerobically fermented and sundried. Expect notes of milk chocolate and raisins. Tomorrow we're brewing an exciting coffee roasted by our friend at Parallel. The Layo Taraga from Ethiopia. The interesting thing about this coffee is that it was identified as a bourbon varietal, which isn't very common in Ethiopia as we many see heirloom varietals. The producer has also undertaken an extra round of sorting for this coffee, at each point of sorting they repeat the process, resulting in a “perfect preparation”. Via neoaaragorn

Running as our Espresso of The Day we have the Kenya Kainamui by 7seedscoffee. This coffee sits on the southern slopes of Mt. Kenya, where the Kainamui Coffee Factory set up their cooperative in 1963. Here they wet mill the coffee cherry grown by the 2000 smallholder farmer cooperative members (approx. 1200 men & 800 women), before sending it to be dry milled. Expect notes of peach cobbler, raisin and honey. Via dajull
