About The Riverina Dairy
The Riverina Dairy brand was born out of a well-equipped and experienced Family Owned, 100% Australian, Riverina Cheese operation. The Riverina Dairy takes its name from the agricultural heartland of Australia where it's facility is located. The Riverina is otherwise known as ‘Australia's Food Bowl', is located in south western NSW bordered on the south by the state of Victoria and on the east by the Great Dividing Range. It is here, just outside Corowa, that The Riverina Dairy raises its cattle and produces the high quality milk which is then transported just 70km down the road to be used to make The Riverina Dairy's premium cheese and yoghurt. The Riverina Dairy brand is rapidly becoming renowned for producing the finest quality dairy products for all Australian families to enjoy.

HALLOWEEN FUN WITH FETTA 🎃Ingredients 🎃
· 6 yellow capsicums · 1/2 tbsp oil · 2 spring onions, sliced... · 1 1/4 cups black beans · 1 1/2 cups pumpkin puree · 100 g fetta cheese, diced · 2 Cups cooked rice · 1 tsp smoked paprika · Salt · Black pepper
Instructions
1. Heat the oven to 200°C 2. Cut straight across the top of each pepper, and remove the seeds. Cut a jack o’lantern face on each capsicum using a small knife (don’t make the holes too large or your filling will fall out!). 3. Set the tops of the capsicums aside, and place the main bodies of the peppers cut-side-down in a baking dish. Drizzle lightly with oil, and roast for around 20 minutes, until slightly soft. 4. Meanwhile, add the chopped spring onions, black beans, pumpkin puree, diced fetta, cooked rice and smoked paprika to a large bowl, and mix to combine. Season to taste. 5. When the capsicums are slightly soft, turn them over, and stuff with the pumpkin mixture. Replace the tops of the capsicums, and return to the oven for a further 20 minutes or so, until the capsicums are soft and just starting to turn golden. 🎃 🎃 🎃 🎃 🎃 🎃 #riverinadairy #fromourpaddocktoyourplate #halloween #stuffedcapcicum #flavours
