Wallington Wines Description
Wines are made from hand picked grapes from vines that produce low yields of intensley flavoured fruit. The grapes are crushed and pressed in their unusual Straw Bale winery. The resulting must is allowed to go through wild yeast fermentation giving the wines an individual quality. Reds are open vat fermented and basket pressed to mature in a variety of oak for up to 2 years before being bottled .
